Mediterranean Festival at Texas Culinary Academy

I just got back from the Mediterranean Festival where I had some wonderful Tapas. I blazed through my plate before I remember to take a photo. Here is the last morsel, a concoction of cod, some onion and bell pepper.

Everyone was amazed by this Garfield-shaped cake. I think the fish was part of the cake too.

After the Tapas seminar we walked from booth to booth sampling wonderful creations by Academy students. We had baklava, olive based-salads, fennel ice cream, a fig balsamic ice cream (amazing!), some great olive oils and almond cakes. Mmm...
